changing paper size

I'm having a problem with my printer. I'm trying to
change the paper size to 8.5X17 to print menus. I have
tried changing the settings in print properties. The page
just runs through the printer.

Go to the Control Panel and select Printers & Faxes. From the Toolbar,
click on File, then Server Properties. In the Forms tab, you should be able
to select Custom Page Sizes.
