combining several files into one file

To FAX a document, I find I have to scan each individual
page into the computer. When it comes time to actually
FAX a multi-page document, I have to send a seperate FAX
for each page in the document since each page that I scan
in is considered a different file.

I have two basic questions:

1. When I scan a multiple page document, I'm sure there
is a way to do it without each page being named its own
file. How can this be accomplished?

2. I'm sure there is a way at the Windows XP level to
merge, combine, or append files. I know this can be
accomplished at the DOS level. How can I do this at the
Windows XP level?
