How to change default file view in Windows in "Open" window

Every time I do a save as or an open or an attach, the window that opens
sorts the files in some weird ununderstandable format. I just want it to open
in alphabetical order each time and allow me to sort it by date optionally.
Without me having to do 4 steps: Select Details, move the window larger,
resize the columns so I can see the date, hit date to sort it.

Is there a way to change this default. I have both Vista and XP Pro and
would like the solution for both if possible. I saw some suggestions on line
that involved setting it, holding the control key then immediately rebooting
but they never seem to work.
