Old programs hiding

The way Vista holds my old programs is a bit confusing to me. We now have
the following
Program Files
Program Files (x86)
Windows
Window.old

Windows.old is where my old programs are hiding. One of which (a game) will
not start while some other applications (office) I would prefer to uninstall
then have two versions. So the questions are
1. How do I port over the applications from my windows.old to Vista so they
are in the start menu etc like any other windows app?
2. How do I properly uninstall old programs?

You upgraded. If you need an application in Vista, install it in Vista.
You cannot bring it over from XP

fair enough but how do I properly "uninstall" old applications. simply delete
the directories?

Since you did an upgrade, XP's gone anyway. Just reinstall them in the same
directory.

re-install them in windows.old....?

that cant be the proper solution.

No, just reinstall them in Vista. They won't go into Windows.Old
