Permissions versus security

What is the difference between permissions and security? I'm moving my data
from an XP machine that had shared folders, and I had shared permissions
EVERYONE and security down to to the user level and I controlled what
activities they could perform. This all worked fine, but someone else it up,
and now that I'm moving to Vista I don't know what it means.
