I assume you are using a printer driver that came with windows. You should
look at the HP website to see if a "full featured" driver is available for
your printer, and if so use it. Remember to properly uninstall the old
driver, and disconnect the printer before installing the new driver. You
might need to manually install the driver if it will not install per the
instructions included with the new driver.

Look for the word 'grayscale' or 'greyscale' in the properties. (spelling
would depend on what country you are in).
