Rebuilding directories

My harddrive died last week and I am able to use it as
long as I don't boot off of it. All the files looked
complete and at first I couldn't get into the various
document and settings files because I didn't have
priveleges....
Then I read here how to take ownership, unfortunately by
the time I was ready to take ownership when I booted up
the two disks, my new and my old, the document and
settings folder had dissapeared. I know the files are
still there because when I took ownership of the entire
drive it listed many of the files which are in the
document and settings folders. Before I scrap this disk,
I would like to retrieve all of those files or as many as
are still good... (especially my .pst file).
So, then the question is any reccomendations on how to
either rebuild the directories, undelete these files
etc.? I just want to get off this difficult disk...
