Is there a way to set save options so that files will
rename instead of prompting to overwrite?

Use File> Save As. Add a number to the file name. Example:
ThisDocument.DOC becomes This Document2.DOC.

If the program you are using has an AutoSave feature, check it's
preference and configuration menus for a choice between overwrite and
create new file.
