Is there a way to display the full file path when using the thumbnail view
instead of just the filename?

Do you mean the extension?
Folder options, view tab, clear "hide extensions for known file types."

I am looking to perform a search for all jpg files and have the thumbnail
view display the full file path i.e. c:\picts\bob.jpg instead of just the
file name below each thumbnail

After you perform the search, just place your mouse pointer over the
thumbnail and you will get the full path in an opening small window. No way
that I know of getting the full path under each thumbnail.
