Too long a clip

First. I am trying to capture analog video through a Canopus AVDC 100 capture card. As the tape is running, I’m starting and stopping video capture. After about 10 minutes of video I have about 3 minutes of saved video (15 or so start and stops). My understanding is that when I hit finish, each of those start/stops should be a separate clip but it seems I end up with one clip with the 3 minutes of video. I have the "make clips when finished" box checked. Is there any way to make shorter clips without going through all the front end set up? Can I use the “capture the entire tape automatically” option and then just import the file?
Second. When capturing video, is there any way to hear the audio? Even with the mute button unchecked, I only can hear audio on playback of clips
